Here's a tasty Japanese snack. You can make it all-veggie, half-veggie or omnivore option. The base of the batter is a Flour & Nagaimo Yam concoction - but there is a Okonomiyaki Pancake mix sold in Japanese food stores if you like shortcuts like me.
Basic Recipe:
1/4 cup Okonomiyaki Battermix
1/2 cup Shredded Cabbage (Red ones would be pretty surely)
2 tbsp of Red Pickled Ginger
1 egg
1/3 cup Water
4 slices of think Pork Slices (Mine was KuroButa, aka Black Pork).
Mix everything through Water in a medium size bowl -- fully incorporate, but do not overmix.
Heat 8" skillet either with Oil or PAM - Medium High heat. And scoop 1/2 of cabbage batter and form into pancake.
Lay 2 pieces of sliced pork on top of the batter. Cover for 2.5 to 3 minutes until the Pork looks 1/2 cooked, and the edges of the batter are dry/puffy. Alternatively you can shake the Pan, to see if the Pancake moves -- and Flip ! Now the Pork is on the bottom. Cook 1 minute.
Condiments on top: QewPie Mayo, Tonkatsu Bulldog Sauce, Bonito Flakes, Aonori (pulverized seaweed).
This is a savory pancake -- more closer in kinship to the Korean seafood cake, rather than the American Auntie Mama syrup pancake. You can swap ingredients -- in lieu of Pork, try seafood like Squid, Shrimp is also good. Maybe Prosciutto, Ham, Turkey -- try try ! Or toss in more veggies with the cabbage - I think Red Peppers, Shredded Carrots would enhance flavor. As You Like !
