Mussels are chameleonic. On a whim, you can dress them up/down, French , Vietnamese or perhaps a blend.
Same technique as last night with an addition of sour creme, thai chili flakes and curry powder.
The golden slurry of curried mussel broth is worth making this for !

My triathlon club hosted a seminar on Chi Running today. I've been running for 30+ years, but I am very interested in running and competing 30+ more.
Effortless running, I feel is one of the many Holy Grails, I am striving to achieve. I have built my running experience primarily on Volume in my 20s, Quality in my 30s (aka no junk miles) -- and now as I climb closer to 40, I need a different focus.
To alleviate pre-surgery anxiety for my tender hip next week, I have been trying to focus on my post-surgery MO. Aside from happy narcotics and physical therapy during recovery -- I need to ensure that I maintain an injury minimizing posture and disposition. POSE, Chi or otherwise, I am certain that I will be reading a lot more to figure this out. PR or not, I want Vitality and Longevity.

I had a leftover glass of DuMol 2008 left over, so briny Steamed Mussels was an obvious option. No reference, cookbooks needed here:
1 tbs of Olive Oil
Sautee red chili flakes, shallots, and celery and boil down Chardonnay (3/4 cup).
Dump carefully cleaned Mussels (1 lbs) into the pot and take down heat a notch before covering.
Shake covered pan @ 3 minutes. Should be done at 6 to 8 minutes. Parsley optional.
Happy Mussels = Opened Mussels. Discard the rest.
Slurp and/or dunk mussels and broth with some crusty bread.

No Knead v 5 ? Idiot proof bread recipe, I tell you ! And I'm no baker !!
Inspiration unlocked at Union Square Mkt when the vendor wanted to charge me $8 for a loaf. $8, really? That's a pack of 5lb flour, yeast, and sugar right there equivalent to at least 10 loaves ??
The soft crackling sound the loaf makes when it cools in room temperature tickled me with delight... and after 20 minutes of wire-rack cooling, I lost my patience and sawed off a piece of cheddar/chile goodness; the crust spectacularly crunchy, the body and aroma - so airy, light and moist.
CJ Bread will accompany my Mussels dinner tonight ...

Had a glass of cabernet left over from last night so why waste it ? Add mushrooms, onions, carrots, garlic, tomato paste, and beef broth - and simmer simmer simmer.
From Smitten Kitchen. On a bed of egg noodles. I love recycling ingredients... especially wine !
Served with Roast Pork Shoulder and Broccolini.
