I had a leftover glass of DuMol 2008 left over, so briny Steamed Mussels was an obvious option. No reference, cookbooks needed here:
1 tbs of Olive Oil
Sautee red chili flakes, shallots, and celery and boil down Chardonnay (3/4 cup).
Dump carefully cleaned Mussels (1 lbs) into the pot and take down heat a notch before covering.
Shake covered pan @ 3 minutes. Should be done at 6 to 8 minutes. Parsley optional.
Happy Mussels = Opened Mussels. Discard the rest.
Slurp and/or dunk mussels and broth with some crusty bread.
Good night.

Had a glass of cabernet left over from last night so why waste it ? Add mushrooms, onions, carrots, garlic, tomato paste, and beef broth - and simmer simmer simmer.
From Smitten Kitchen. On a bed of egg noodles. I love recycling ingredients... especially wine !
Served with Roast Pork Shoulder and Broccolini.

I forgot to write up the pomelo salad so I made this again. Surprisingly easy to peel the Pomelo, I must have Man-Hands as I have seen / heard people struggle taking apart the fruit.
Pomelos here are dressed with Arugula, crunchy Mung Bean Sprouts and a drizzle of Vietnam dipping sauce:
1 tbs Viet Fish Sauce (3 Crabs brand)
2 tbs Fresh Lime Juice
Pinch of Sugar
Pinch of Thai chili
Pinch of Grated Ginger
You can loosen this a bit w water, 1 tbs ? Mix mix drizzle...
The Viet fish sauce is quite potent smelling and its aroma takes me back to the local markets I walked around in Hanoi and Halong Bay. Seriously, the 'scent' will knock your stinky socks off but combined with lime juice, ginger and chilis, the flavors meld together ... addictively.

Moyashi = Mung Beans. Salad laced with ponzu, soy, garlic, spot of sesame oil and togarashi chili.
Our main dish, stir fried veggies and scallops was less than stellar. I suppose I have this quirk - that I don't like many Asian-inspired recipes offered to the masses. It was an apricot preserve / soysauce / ginger combination sauce, but even as I reduced the sweet apricot proportion, it just tasted overly sweet for my palate. It tasted very Panda Xpress...

Yes, it's ugly. But it's Friday - gimme a break!! I made the pizza dough early in the AM (5 min active time) - and let it get yeasty proofy poughy (8+hours inactive time) Pizza stone @450F is a must for a crunchy pizza. Sausage and fresh mozzy from WF on a bed of homemade stock marinara.
Oh, and a side of broccoli rabe for a little greenery.
